Comforting, one-pan chicken thighs glazed with brown sugar and halal-friendly seasonings, paired with caramelized peaches for a sweet-and-savory twist.
Ingredients
8 bone-in, skin-on chicken thighs
1/4 cup olive oil
1/2 cup brown sugar
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp cayenne pepper
2 cups peeled and sliced peaches
1/4 cup apple cider (non-alcoholic bourbon substitute)
Salt and pepper to taste
1 tbsp butter (halal-certified, if needed)
2 sprigs fresh thyme
Instructions
Preheat oven to 400°F (200°C)
Season chicken thighs with salt, pepper, paprika, cumin, and cayenne
Heat olive oil in a cast iron skillet, sear chicken thighs skin-side down for 5-6 minutes
Flip thighs and add brown sugar, stirring into oil to form a glaze
Add sliced peaches and apple cider, baste with glaze
Transfer skillet to oven, bake for 30-35 minutes until thighs are golden
Remove from oven, stir in butter and thyme, serve directly from the skillet
Notes
Substitute apple cider for bourbon
Use halal-certified butter if available
Add a drizzle of honey or maple syrup for extra sweetness
Thighs can be marinated with spices for 30 minutes ahead
Serve with rice or roasted vegetables to soak up the glaze
