A vibrant, creamy salad combining tender grilled chicken, fresh corn, tomatoes, bell peppers, and a zesty lime-chili dressing. Refreshing and hearty, perfect for lunches or summer meals.
Ingredients
1.5 lbs boneless, skinless chicken breasts
2 ears fresh corn, kernels cut off
2 medium tomatoes, diced
1 red bell pepper, diced
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
4 tablespoons mayonnaise
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat grill to medium-high heat (350°F/175°C). Season chicken with chili powder, salt, and pepper. Grill for 5-7 minutes per side until fully cooked.
To make dressing: mix mayonnaise, lime juice, 1 tablespoon reserved lime zest from dressing, and half the chopped cilantro.
Combine grilled chicken (chopped if desired), corn, tomatoes, bell pepper, and red onion in a large bowl. Add dressing and toss to coat evenly.
Finish with remaining cilantro before serving.

Use pre-cooked chicken for quicker prep
Add cotija cheese for a Mexican-inspired touch
