Description

Tender chicken grilled to perfection with a zesty lime and cilantro marinade. Bright, fresh, and easy to make, this dish is perfect for summer meals or weeknight dinners.


Ingredients

Scale

1 ½ pounds thin-sliced boneless skinless chicken breasts (about 4 breasts)
1 to 2 teaspoons lime zest (from about 23 limes)
½ cup fresh lime juice (from about 46 limes)
¼ cup olive oil
¼ cup honey
¼ cup chopped fresh cilantro


Instructions

Preheat grill to medium-high heat (around 375°F/190°C)
In a bowl, whisk together lime zest, lime juice, olive oil, honey, and cilantro to make the marinade
Add chicken and stir to coat evenly
Marinate for at least 30 minutes (3-4 hours optimal)
Place chicken on the grill, brush with remaining marinade
Grill for 5-7 minutes per side or until fully cooked (internal temperature of 165°F/74°C)
Serve immediately


Notes

For best results, marinate overnight in the refrigerator
If not using an outdoor grill, use a stovetop grill pan
Can substitute orange zest and juice for a different citrus flavor
Let chicken rest for 5 minutes before slicing to retain juices
