Ingredients
4 boneless, skinless chicken breast halves (about 6 oz each)
3 tablespoons soy sauce or coconut aminos
2 tablespoons honey
1 tablespoon vegetable oil or avocado oil
Juice of 1 large lime (about 2 tablespoons)
2 cloves garlic, minced
1/4 cup chopped fresh cilantro
1/4 cup finely chopped red bell pepper
Instructions
Combine soy sauce, honey, vegetable oil, lime juice, and minced garlic in a large bowl to create the marinade.
Add chicken breasts and mix well to coat. Cover and refrigerate for at least 2 hours, or up to overnight.
Preheat grill to medium-high heat (about 375°F). Remove chicken from marinade and discard excess (reserve marinade for basting if desired).
Grill chicken for 5-7 minutes per side, or until fully cooked (internal temperature of 165°F). Avoid overcooking to maintain juiciness.
Top each chicken breast with a sprinkle of chopped cilantro and red bell pepper just before serving.
