Ingredients
4 skinless, boneless chicken breasts
1 large onion, thinly sliced
8 oz sliced mushrooms (like cremini or button)
2 cloves garlic, minced
1 cup Monterey Jack cheese, shredded
2 tbsp olive oil
1 tsp paprika
1 tsp dried thyme
1 tsp salt
½ tsp black pepper
Instructions
Preheat oven to 375°F (190°C)
In a large oven-safe skillet, heat olive oil over medium heat. Sauté onions for 5-7 minutes until golden and caramelized
Add mushrooms and garlic to the skillet. Cook for 5 more minutes until softened
Sprinkle paprika, thyme, salt, and black pepper over the chicken breasts
Place chicken in the skillet with the sautéed mixture. Spoon the veggies evenly over each breast
Top generously with Monterey Jack cheese, pressing it gently to adhere
Transfer to oven and bake for 15-20 minutes until cheese is bubbly and golden
Serve warm with optional sides like mashed potatoes, rice, or crusty bread
Notes
Cheese options: Cheddar, mozzarella, or vegan cheese work well
Bake time may vary based on chicken thickness
For added flavor, use garlic salt or a pinch of cayenne pepper with the cheese
